There is a pumpkin pie AND an apple pie sitting on our dining room table right now.
There was no reason for me to make yet another dessert.
But I made a promise to my friend 2 weeks ago that I would make her a cinnamon chip dessert.
This is me keeping my promise.
Cinnabomb Cookies
2 tbsp ground flaxseeds
1/2 cup milk
1 tsp apple cider vinegar
1 cup peanut butter
2/3 cup brown sugar
1 tsp vanilla
1 cup + 2 tbsp whole wheat flour
1/2 cup all-purpose flour
2 tsp cinnamon
3/4 tsp baking soda
1/4 tsp nutmeg
1/8 tsp cloves
3/4 cup cinnamon chips
1. Preheat oven to 350*F.
2. Combine flax, milk, and vinegar and let sit for 10 minutes. In a large bowl, stir together flours, cinnamon, baking soda, nutmeg, and cloves. Set aside. In yet another bowl, mix together brown sugar, peanut butter and vanilla. Stir in flax mixture. Pour wet ingredients into dry ingredients and stir until just combined.
3. To form the cookies, start by spooning a heaping tablespoon of dough on your hand. Roll the dough between your hands to form into a one inch ball. Squish the ball into a 1.5 inch flat circle, leaving the center thicker than the edges. Place 8-10 cinnamon chips in the center of the flatten piece of dough. Gently fold edges of the dough over the cinnamon chips to enclose then in the center. Place cookie dough ball on a cookie sheet sprayed with cooking spray.
4. Bake 10-12 minutes, rotating half way through baking. Cool on a baking tray.
